Is there an easier way to make the mane and tale lie down than having to select all the bones? I'm very very frustrated right now.

Most definitely yes! (one dial for the mane and one dial for the tail is all it takes) See the above video tute.
ALL dials for all Harry mane, tail, fetlocks, Unicorn horn, beard, lion tail and so on are under "HiveWire Horse" -> Actor. DO NOT select the mane, tail and so on to pose.

The video was indeed most helpful, I appreciated that it covered both Daz and Poser. I use Daz but have Poser and would like to get proficient with that as well.
